Inspector notes: Coleslaw at 46-47*F found in portioned containers and the large coleslaw container in the walk-in cooler. PIC stated the coleslaw was prepared around 10 AM today. The smaller containers were covered with plastic wrap, while the large container was covered with the hard plastic lid. Both covers were impeding airflow to the cooling food product. PIC repositioned the covers in a manner than allowed airflow into the containers and moved them to the freezer temporarily to rapidly cool the coleslaw
