Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness

Inspector notes: Observed employee remove clean dishware and utensils from dishwashing machine located at the bar. Chemical warewashing machine in question observed not being able to add sanitizer during a cycle (read 0 ppm of chlorine at the time of inspection). Sanitizer hook-up observed empty. PIC stated establishment is out of sanitizer to be restocked. Person in charge states they will submit a work order as soon as possible. Discussed the importance of having the dishwashing machine being able to supply the appropriate concentration of sanitizer (50-100 ppm of chlorine or 200-400 quaternary ammonia). PIC agreed to not use warewashing machine until it has been repaired. Establishment will clean and sanitize food contact surfaces at 3-compartment sink located in the kitchen. Dishware and utensils were moved to 3-comp sink to be properly washed and sanitized. Reinspection scheduled on 10/14/2024
