Inspector notes: Observed two plastic cambros of cooked brisket, portioned in bags, stored on the bottom shelf of a two-door standing refrigerator at 48-50'F at time of inspection. PIC stated that brisket was thawed and portioned on Sunday, two days prior to inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All TCS foods improperly cooled were discarded by PIC at time of inspection

Inspector notes: Observed plastic cambro containing nacho cheese(92'F) being stored in a display warmer in the kitchen area. PIC stated that the commercially packaged nacho cheese was heated in the oven to 135'F about 1.5 hours prior to inspection. Discussed proper hot holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection
