Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. JT's bar sanitizer bottle was switched, machine primed, then tested correctly. The Salon dish machine will be out of order until a technician can service. Glasses will be run into JT's

Inspector notes: Observed ground beef in a tall cold holding unit in front of the 3-comp sink still in the cooling process at 52*F with lids on. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling
