Per PIC the product was placed open and prepared 2 hrs prior to inspection start time. Also observed inside two door refrigerator with ambient at 53.7*F with over 20 grab and go cold sandwiches at 50*F. Per PIC sandwiches prepared 1 hr prior to inspection start time. Directed PIC to have employees move grab and go to main walk in unit to cool to 41*F. ====Improper method used
