Inspector notes: Observed equipment being actively sanitized in the sanitizer sink of the 3-compartment sink in a quaternary ammonia based sanitizer solution measuring less than 150 parts per million (ppm). Per general manager, the establishment had run out of sanitizer earlier in the day and already had plans to pick up more from a nearby location. The establishment shall properly sanitize any equipment coming into contact with food with quaternary ammonia sanitizer of a concentration between 150-400ppm for at least 30 seconds or per manufacturer guidelines. The manager went to obtain more sanitizer at the time of inspection. In addition, the manager rewashed, rinsed, and sanitized the equipment in the 3-compartment sink
