Inspector notes: At the time of arrival to facility, observed large deep tubs of cooked chicken wings at 98-130 deg f . all left out on the shelves. per manager prepared after lunch. suggested to utilize the onsite flat metal trays and 4-inch metal pans and place all cooling food, in all available food coolers. 2 tier cooling discussed. Maricopa county guidance cooling document reviewed. copy provided. also informed staff to assess cooling existing 4-5 tubs of chicken prior to preparing/frying more chicken. owner was not on site. spoke to owner via phone. cooling tcs food strategies reviewed. staff started to place food in designated shallow metal pans and placing in on site refrigerator and on site freezer spacers for rapid cooling
