Inspector notes: Quat sanitizer solution in wiping cloth buckets and inside the sanitizer compartment at the 3 compartment sink observed with a concentration above 500ppm. Chemical sanitizers may be toxic if not used in accordance to FDA food code requirement. There were dishes in the sanitizer solution and recently sanitized containers air drying. It was determined that the sanitizer dispenser was/is dispensing a higher than normal concentration of sanitizer solution. All sanitizer solutions were diluted to yield proper concentration between 200-400ppm. PIC stated that they will submit a work order for the dispenser and continue to dilute the solution, and test it to confirm proper concentration before use. Establishment had test strips accessible and readily available

Inspector notes: No proof of a certified food protection manager at time of inspection. Discussed with person in charge that there needs to be at least one Certified Food Manager at the establishment at all time
