Inspector notes: -- Yellow American and white American sliced cheese on prep line had discard time of 10:00 AM. The person in charge stated the cheeses were just placed out recently prior to the inspection, but was unsure exactly when the cheese was placed out. At the time of inspection the PIC voluntarily discarded the cheeses. Recommended to PIC setting 4 hour timers to alert employees to discarded TCS products on time as a control after 4 hours have passed. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control
