As per the main cook, items were removed from walk in cooler portioned to prep buffet table and were placed back into the walk in cooler tightly covered with plastic wrap approximately 90 minutes prior to the inspection. Advised staff to loosely cover or uncover until items reach 41*F, also to pull out fewer items when preparing food for buffet. Items were loosely covered to quickly chill back to 41*F
