Inspector notes: Observed packaged wheels of cincho cheese for retail sale in retail cold-holding unit. Label on package states it is distributed by Xochipala Dolar Y Mas LLC, who does not possess a Food Processor permit and is not permitted to package food items, making the cincho cheese an item from an unapproved source. Person in charge (PIC) removed cheese from unit. Observed plastic bag packaged unlabeled Oaxaca cheese in same retail cold-holding unit. Person in charge (PIC) provided labels, stating cheese is made in Mexico, but could not provide additional documents. Discussed with PIC that documents, such as invoices, are needed to verify if cheese is from an approved source. PIC removed cheese from unit until source is verified. Re-inspection for approved source for Oaxaca cheese is scheduled for 10/18/2024
