Inspector notes: Observed multiple containers of leftovers from lunch being cooled inside walk-in cooler while tightly sealed with saran wrap. Rice, chicken tenders, pork had internal temperature ranges of 103-125*F. Per PIC, the containers were placed in walk-in less that 30minutes prior to inspection. PIC vented all containers and portioned the rice into half pans to facilitate rapid cooling. Prodcuts were later observed with an internal temperature range of 87-95*F and dropping. TCS foods must be cooled in uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means
