Inspector notes: Observed main dishwasher and the main dishwasher with chlorine sanitizer measuring at 25 PPM. Staff primed and ran the dishwasher multiple times but were unable to get the sanitizer strength within the correct range (50-100 PPM). The manager called their third-party servicer who will be out to adjust both dishwashers later today. Management was alerted and plans to use the 3- compartment sink to sanitize dishes until the unit can be serviced. Reviewed sanitizer concentration requirements

Also observed heavy crusted black build up internally on the bottom of the pizza oven underneath where the metal rack carries pizzas. Also observed heavy dust on the ceiling between the two walk ins and light build up on the walls in the raw chicken walk in. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection.
