PIC stated the boards are washed, rinsed, and sanitized once a day in the morning around 5:00 AM. PIC had the cutting board washed, rinsed, and sanitized after discussion about cleaning frequencies with inspector. Please ensure food contact surfaces that have TCS food items contact them are switched out for clean ones, or fully washed, rinsed, sanitized, and air-dried, every 4 hours
