Inspector notes: Observed knives on magnetic strip stored as clean with visible dried food debris and residue on the food-contact surfaces at time of inspection. Also observed commercial deli slicer stored on a metal table in the food prep area with dried food debris and gelatinous residue on the blade and metal tray. Per PIC, these items had not been used in one day. more than 4 hours prior to inspection. Discussed cleaning frequency with PIC. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection

Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
