Inspector notes: The egg and cheese wraps were held at 115 degrees F in hot holding steam in the buffet line. Food items were placed in the buffet line for less than 30 minutes. The cook re-heated the item to 165 degrees F and returned it to the buffet line. The paper lining covering underneath the food may have prevented the conductivity and transfer of heat. Food items were reheated in the microwave to 165 degrees F
