Inspector notes: Observed warped cutting boards being stored in the back kitchen area. Also observed several knives with dents and chips in the same area stored in a wall-mounted knife holder. PIC confirmed that these items were not in-use at time of inspection. Discussed the importance of maintaining all equipment in good repair. PIC removed the items from service areas at time of inspection. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection

Inspector notes: Observed recessed ventilation fans without covers in the back food prep area. The ventilation fans were visibly covered in black dust. Discussed providing vent covers for the area that are directly over food prep areas with PIC. Physical facility must be maintained in good repair at all times. Repair physical facility prior to next routine inspection

Inspector notes: Observed small leak at 3-comp sink faucet with plastic wrap around the affected area. Per PIC the leak just started last week prior to inspection. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection
