Raw and ready-to-eat foods not properly separated (corrected on site)
Inspector notes: Observed a cup of raw shell eggs stored above containers of drink garnishes and squeeze bottles of juice and simple syrups in a small fridge under the bar. PIC stated that the raw eggs are not supposed to be at the bar and are not used for any drinks. PIC removed the raw shell eggs from the refrigerator and moved the eggs to the kitchen at time of inspection. Suggested to PIC discussing establishment procedures with bartending staff. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code

Plumbing system not maintained in good repair
Inspector notes: Observed flexible accordion fold hosing used for the drain line of the ware washing machine at the bar. The line is not sloped to the drain and has many turns where water is getting stuck. Informed PIC that the drain line needs to be sloped to the drain so that water is not being stored inside the line after draining. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection
