PIC ran the machine 3-4 more times while priming the sanitizer and was unable to reach a concentration of 50-100PPM during the inspection. PIC scheduled a service request to address the issue at time of inspection. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Discussed hot water requirements with PIC. Hot water generation and distribution systems must be sufficient to meet the peak hot water demands throughout the food establishment. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. PIC primed the sanitizer 3-4 times with no effect to the concentration. Discussed having the unit serviced prior to returning to daily use. Instructed PIC to set up 3-comp sink until dishwasher has been serviced and is able to dispense chlorine sanitizer onto food contact surfaces at 50-100PPM or per manufacturer's recommendations.
