Per PIC establishment dates containers with date that item is taken out of freezer and date only one container from batch. Discussed with PIC that all containers must be dated and they must be dated with the date of preparation/cooking. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)

Per PIC they record discard time, Discussed with PIC that items should be documented with times they are put out on buffet line. All TCS foods being held under time as a control were properly time stamped at time of inspection

Inspector notes: Observed cooked potatoes, and prepped crab mix in Pepsi cooler to cool. Also observed coked shrimp and cooked ribs in bottom portion of prep cooler put in to cool. Per PIC all items were made less than 2 hours ago. Ambient temperature of Pepsi cooler was 61.5*F per min/max thermometer. All TCS Items were moved to walk-in to properly cool down to 41*F. Discussed with PIC that prep cooler and Pepsi cooler are not to be used to cool items down, please use walk-in to cool cooked and prepped items
