Inspector notes: Observed raw chicken stored above raw beef. Observed raw bacon-wrapped hot dogs stored above RTE pasta. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code

Inspector notes: Observed multiple TCS foods prepared more than 24 hours prior without proper date marks, including various salsas and pasta noodles prepared yesterday. Observed 10+ items improperly date marked from 10/30 and 10/31 including cabeza, shredded beef, chicken, pastor, and pibil. Per PIC, the foods were made and frozen on the date marked but removed from the freezer yesterday to thaw for service to customers today. Discussed frozen foods should be marked with the day of prep and freeze date. Upon removal from the freezer, mark each food with the date removed from the freezer plus 5 additional days (if made and frozen the same date.) Ensure than the previously frozen foods do not exceed 7 days under refrigeration. All RTE/TCS foods were properly date marked at the time of inspection. Also observed RTE rolled tacos and tacos without a prep date. PIC stated the foods were prepared 11/12. Upon further discussed, the PIC stated the meat fillings were previously cooked and cooled on 10/30, removed from the cooler yesterday, and then filled into tacos. PIC added a date mark for 10/30, 11/12-11/17.) RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
