Inspector notes: Observed homemade roasted red beat hummus and red pepper hummus were date marked from 10/12, Bellavatino merlot and goat cheese were date marked from 10/11, and the ham sliced was marked 10/11 but the bulk was not date marked. Per PIC the sliced ham came from the undated bulk ham. Embargoed the homemade hummus, cheeses and ham and PIC discarded at time of inspection. Discussed with PIC, RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)

Inspector notes: Observed on the commercial can opener to have metal shavings all around the dull piercing blade. Discussed with PIC to have blade sharpened/replaced as often as necessary to avoid small metal shavings to get into foods. PIC took the can opener to the three-compartment sink to get washed. Also observed the half of the bottom shelf under the prep table to be out of place and storing food prep items below the required 6 inches off of the ground. PIC relocated all food prep items at time of inspection
