Inspector notes: Observed containers of cooked potatoes cooling on a prep table next to cookline. Observed 115°F internal temperature of cooked potatoes, per probe thermometer. Per Person in Charge (PIC), potatoes were cooked one hour prior to inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Cooked potatoes were removed from prep table and placed into freezer by PIC to rapidly cool. Discussed utilizing cooling log to track cooling process of potatoes with PIC
