Inspector notes: Observed employee handle dirty dishes in soapy water, rinse dishes, and then place dishes into sanitizer. Employee was then observed removing sanitized dishes from 3-compartment sink without washing hands prior to handling sanitized dishes. Hands must be washed at any time contamination occurs and when changing tasks. Had employee place dishes back into sanitizer solution and wash hands prior to removing sanitized dishes. Discussed the importance of proper hand washing and when hand washing is required with the Person-in-Charge (PIC)
