Inspector notes: Observed items such as mashed potatoes, gravy, and green beans in an upright warmer at temperatures of 67-87*F. Hot hold of food items to be at 135*F or greater. As per the head line cook, items were placed in warmer at approximately 830am to warm before heating and placing on grill. Warmer had an ambient temperature of 105*F. Hot hold foods must be reheated to 165*F within 2 hours and then held at 135*F. Advised to heat to 165*F and hold at 135*F. Head line cook discarded items at time of inspection. Provided documentation for time as control when holding hot or cold foods
