Inspector notes: Observed ceviche and aguachile being served at the deli from the cold holding case on the main service line. Per employee the items were made with raw shrimp marinated in lime juice. Shrimp was retrieved from the meat market at the same establishment. No signage or labels on the product indicated raw shrimp, and there was no consumer advisory. When labels were printed for weighed product, the ingredient list identified the shrimp as cooked. Person in charge removed the product for discard at time of inspection. To sell any raw shrimp product consumer advisory is required and parasitie destruction letter must be obtained from the manufacturer and maintained onsite for review during inspections. Manager said they will utilize only precooked shrimp for product in the future
