(A) EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be cleaned: (4) Before using or storing a FOOD TEMPERATURE MEASURING DEVICE. At time of inspection, three slicers with accumulation of food debris on food and nonfood contact surfaces. Per manager, unknown time of when slicers were taken apart and washed rinsed and sanitized. Instructed manager to wash rinse and sanitize slicers. Recommended slicer cleaning logs to better monitor 4-hour cleaning of slicers. All food-contact surfaces that contact TCS foods are to be cleaned every 4 hours by washing, rinsing, and sanitizing
