The person in charge stated the chicken had been cooked and placed for cooling 4.5 hrs ago and removed the chicken from the plastic bag to be placed into a blast chiller for rapid cooling before being repackaged and placed back into the self-serve display case. Discussed fully cooling chicken to 41F or below prior to placing in sealed plastic bags and in the open display case
