On a speed rack near the grill observed raw beef bone/65°F, ratatouille/75°F, and quiche/72°F held at room temperature. According to the chef items are discarded within 4 hours of being removed from temperature control. No time stamps or written policy available for review at time of inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection. Must provide written time as a control procedures prior to re-inspection (3/19/2026).
