Staff immediately disconnected the dispenser from the mop sink faucet at the time of inspection

Inspector notes: Observed in-use high temp conveyor dishwashing machine with a surface temperature not exceeding 158°F after multiple run-throughs of two temperature measuring devices. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC called maintenance and switched to using the 3-compartment sink at time of inspection
