Inspector notes: Observed a large, deep uncovered plastic container of cooked and cooling beef soup with an internal temperature as measured using a probe thermometer of 114°F that had been placed into the walk-in cooler 45 minutes prior to temperature assessment. It was observed that the soup was approximately 8-10 inches in depth in the container. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means
