Inspector notes: Observed a large, deep uncovered plastic container of cooked and cooling beef soup with an internal temperature as measured using a probe thermometer of 114°F that had been placed into the walk-in cooler 45 minutes prior to temperature assessment. It was observed that the soup was approximately 8-10 inches in depth in the container. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means

Inspector notes: Observed a heavy accumulation of grease on the hood vent over the flat-top stove. Discussed with person in charge to have the hood vent cleaned. Person in charge will have the hood vent cleaned. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection
