Inspector notes: Observed TCS food being cooled in a under-table reach in unit with an internal temperature of 61*F. Internal temperature registered with an internal probe thermometer. TCS food items included green chili beef and red salsa pork ribs. Per PIC the previous employee had allocated the hot food into smaller containers to cool down after being held at temperature on the line. PIC stated the food was inside the unit for 4hrs and were unable to verify if the the food had reached cooling milestones of 70*F in under 2hrs. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrected at time of inspection
