Inspector notes: Observed cook on the line crack an egg, drop the egg in the pan, and stick gloved finger to break the yolk. The cook proceeded to grab a paper towel to wipe hands and begin to complete cooking the egg without washing hands or changing gloves. Person in charge (PIC) instructed cook to wash hands and change gloves. Discussed proper handwashing and changing gloves. Also discussed pre-cracking eggs and using a spatula to help prevent cross contamination

Inspector notes: Observed in-use chlorine-based dish wash machine with a concentration measuring 0ppm. PIC stated they have been having issues with machine and will call to have unit service. Establishment will manually sanitize dishes in 3-compartment sink with quat-based sanitizer until dish wash machine has been fixed and chlorine sanitizer concentration measures 50-100ppm. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels
