Inspector notes: Observed in hot holding equipment on the cookline to be holding 2 containers of meatballs with red sauce. Per person in charge (PIC) one container was placed under hot holding from 4.5 hours prior to inspection and the temperature measured with probing thermometer was 98*F to 110*F in different areas of the container. The other container has been placed there 2.5 hours prior to inspection measured with probing thermometer was 110*F to 121*F in different areas of the container. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were embargoed and discarded by PIC at time of inspection
