Inspector notes: Observed a closed container of red sauce used for pizza measuring at 125*F in a standing refrigerator. Per manager, it was made within the past hour. Manager placed frozen ice wand and moved the container to a shelf in the walk-in refrigerator. Observed a container of tomato soup in the standing refrigerator measuring at 95*F. Per manager, soup was made less than 2 hours prior. Manager reheated soup in a pot to 165*F during time of inspection and restarted the cooling process. Discussed cooling methods and ensuring that food is cooled in the walk-in or standing freezer in shallow pans and are left open and higher up in the walk-in refrigerator during the cooling process. TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling
