Manager stated the taco rolls were prepared less than 1 hour prior to inspection. Discussed proper hot holding methods and introduced time as control with manager. Manager moved the cooked taco rolls to freezer for fast cooling at time of inspection

Facility overstocked the product in the hot hold machine. Manager said it had been there for 30 min. Facility reheated product to 165F on the stove. Ensure it maintains 135F throughout the entire food. Talked to manager about using half as much product to keep at the right temperature
