Inspector notes: Observed vegetable slicer installed on the wall to have food debris stuck in cervices and white/green residue coating most of the surface of the blade. PIC stated that the slicer was not used the day of inspection. PIC stated that it is cleaned in place by using buckets of water, soap, and a sanitizer cloth. The slicer blade is secure to the wall-mounted portion by nuts and bolts. Informed PIC that the slicer needs to be washed, rinsed, and sanitized in a manner that will leave the equipment clean to sight and touch. Informed PIC that the slicer cannot be used until it is properly cleaned and sanitized to sight and touch. Informed PIC that an alternative slicer that has the capability of being properly washed, rinsed, and sanitized needs to be obtained prior to reinspection.
