Inspector notes: Shredded cheese in 3 plastic containers found with internal temperatures of 49-51*F; temperatures verified with PIC's and inspector's probe thermometers. PIC stated the cheese had remained in the walk-in since yesterday's portioning of it and had not been brought out. PIC discarded the cheese. The cheese may have failed to properly cool because the containers were stacked, covered, made of plastic, and two of the three pans were about 4" deep. Discussed cooling practices with PIC.
