Inspector notes: Observed various shapes of cooling pasta with internal temperatures ranging from 46-58*F in the walk in cooler and 58-60*F in the prep cooler. Observed all pasta wrapped tightly in plastic bags and stacked in the walk in cooler. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling

Inspector notes: No timestamps observed on RTE par-cooked pizzas held at room temp and measuring 72*F with a probe thermometer. PIC stated the pizza was cooked 1 hour prior and they had been to busy to mark the time. All TCS foods being held under time as a control were properly time stamped at time of inspection.
