According to Logs, temperature is used for control and is discarded within 4 hours of service for quality purposes. PIC placed a service ticket at time of inspection to have warmer serviced. Discussed using time as a control for food safety. Provided guidance document to create a time as a control policy. All TCS foods were discarded at time of inspection

Employee was not handling any food at time of inspection and discussed importance of restricting employees with any open wounds or cuts with puss on handling any food. Inspector notes: Observed spicy queso and jalapeno cheese tornadoes in roller with an internal temperature of 125*F. Also observed chicken sandwich, BBQ Rib Sandwich, and cheeseburgers in hot case with an internal temperature of 120*f. According to PIC, items had been previously cooked in back rollers 1 hour prior to inspection and were moved to front rollers to hot hold. Foods were voluntarily discarded at time of inspection. Also observed nacho cheese dispensing at 117*f, according to PIC, time could not be determined how long cheese was in warmer and was discarded at time of inspection. Discussed importance of monitoring cooking temperatures to ensure minimum temperature of135*F is reached
