The dish machine was run three more times after priming the sanitizer and draining + refilling the dish machine. Final rinse chlorine concertation did not measure between 50-100 PPM on any of the additional attempts. Acceptable final rinse chlorine concentration shall measure between 50-100 PPM. Establishment will utilize the kitchen dish machine to sanitize bar glassware and utensils until the bar dish machine is repaired

Inspector notes: Observed a large container of salsa/74 ºF over 12 inches deep cooling in a melted ice bath so the salsa was not fully surrounded in ice. According to the person in charge the salsa had been cooling for an hour and 50 minutes. TCS foods shall be cooled from 135ºF to 70ºF within 2 hours and cooled from 70ºF to 41ºF within 4 hours. The salsa was reheated to 165°F at time of inspection. According to the person in charge, the salsa will be split into two smaller portions. Ice wands will be used along with a full ice bath to cool salsa within the required time frame
