Inspector notes: 3 1/3rd pans of cooked meat sauce holding at 95-120 degrees F in table top hot hold unit. Unit was set on 3 and water temperature was at 145 degrees F. As per employee product was placed hot well about 12:00 pm. Instructed person in charge to reheat to over 165 degrees F on the stove top. Reviewed how to check thermometer calibration using ice water at 32 degrees F, proper reheating process/temperatures and hot holding requirements
