Temperatures for critical control points for ROP products had not been recorded in establishment’s logs since October 2024. Complete and accurate monitoring of all critical control points must be documented and maintained on the premises for at least 180 days. Observed thawed salmon in reduced oxygen packaging in the walk in cooler. According to establishment's HACCP procedures, fish must be removed from ROP prior to thawing. PIC removed fish from ROP at time of inspection. Reviewed HACCP plan and discussed importance of following approved procedures
