PIC discarded the deli ham, see embargo form and dated the open packages of turkey and ham, which were opened two days prior to inspection. Discussed the importance of date marking and discarding TCS foods 7 days after opening, to prevent a hazardous amount of Listeria. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
