Inspector notes: Observed employee behind the meat counter working with food. Employee then disposed of the gloves they were using and touched the soiled exterior of the trash can while doing so. The employee then grabbed new gloves without washing hands and began to work with the food again. The employee was notified and stopped what they were doing to properly wash their hands prior to going back to working with food. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Discussed with person in charge utilizing different trash cans that don't stay closed all the time so that trash can be deposited without having to touch the soiled lid each time
