Inspector notes: Observed bakery staff conducting warewashing for the on site salt, sugar containers . staff were rinsing /scrubbing soiled containers with water and placing inside the final basin ,then just wiping containers dry with a towel. showed manager on duty. reviewed a proper manula warewashing sequences. showed staff how to fill manual three compartment basins, as soap, then rinse in clean water and finally third basin filled with multiquat, allowing washed and rinsed food contact equipment to be submerged in sanitizer. staff provided coaching moment to bakery staff. air drying food containers after the three manual warewashing procedure discussed as well. Multi quat was prepared at final basin , checked at 200 ppm concentration
