Inspector notes: Observed an employee that was working on the cooking line cracking raw eggs into a pan. The employee dropped the broken eggshells onto the floor, and was then observed grabbing the broken eggshells off the floor, removing their gloves, grabbing a new set of clean gloves and then blowing into the glove to inflate the glove for easier donning. The employee was instructed to remove their gloves and wash their hands at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Inspector notes: Observed pans of roasted red chili salsa in a hot holding unit with internal temperatures as measured using a probe thermometer ranging from 108°F-120°F. According to the person in charge, the salsas had been in the unit for less than 2 hours and were reheated to 165°F and hot held at 135°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above

Inspector notes: Observed a personal bottle of water that was stored inside of the ice machine that is also the ice used for beverages. The water bottle was removed from the ice machine and the ice around the bottle was embargoed at time of inspection (see embargo form). Discussed with person in charge that ice used as an exterior coolant may not be used as an ingredient in any food/drinks
