After reconnecting sanitizer line to dispenser, quaternary sanitizer was dispensed at +500ppm. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Inspector notes: Observed various bagels containing vegetables, meat, and cheeses with time stamps stating the discard time was an hour prior to inspection. PIC stated that the bagels were switched out a few minutes prior to inspection but the time stamps were not changed. Discussed with PIC that the time stamps need to be changed when the foods are exchanged. PIC wrote the correct time stamps at time of inspection.
