Inspector notes: Observed various TCS and non-TCS foods cold holding above 41°F in the medium-sized low refrigerator across from the cash register. The refrigerator measured 54.5°F on the min/max thermometer. All thermometers were calibrated with staff at time of inspection. Alerted the manager who discarded any Time Temperature Control for Safety (TCS) that had been in the unit overnight (see embargo). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. A work order was placed on the refrigerator at time of inspection. Discussed cold holding requirements with staff. A reinspection will occur on this unit in 10 days
