PIC stated cutting boards were washed the previous night and had been used for the past 5 hours today. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection

The PIC was unable to determine the day the TCS food item had been prepared and chose to discard the pizza sauce at the time of inspection
